A wise person once told me “Never order sushi in the desert”. We were in Aguascalientes, Mexico at the time and I was temped to get some sushi at the May Fair. I would expect this is pretty good advise.
However, I must admit that my all time favorite recipe is for Lobster Bisque, which I ordered at a restaurant in El Paso, Texas. That’s right, another town in the desert. We were on a business trip visiting an electronic supplier (Elamex) in Juarez. At dinner back across the border, I could not resist the Bisque on the menu.
It only took one or two bites to realize that this was one of the best soups I have ever experienced. So, I asked the waiter if I could get a copy of the recipe. He obliged and brought out a hand written copy which I still have today.
I had to laugh when one of the first items on the menu was 2 quarts of diced yellow onion. Obviously this was a large serving for a restaurant. So, we scaled down the amounts and tried it at home. Our shrimp bisque soon became a household favorite. To this day we will make it on special occasions.
